If your garden is producing more vegetables than you know what to do with, a U-S Department of Agriculture Web site can provide tips on preserving them. Food Technology Specialist Nancy Flores with New Mexico State University's Cooperative Extension Service says the Web site provides good information on a variety of safe and up-to-date preserving techniques.

"It's a great site for consumers, on canning and freezing and it also talks about drying and curing products at home. It's for consumer products. It's research-based. They even have tips on planting and things to do to help in your garden."

Flores says with the detailed instructions provided on the site, even a novice can experiment with a variety of food preserving techniques.

"It gives specific procedures on canning and pressure methods used by consumers. It has information on altitude which is important for people in New Mexico."
